For a bakery, it is advisable to choose an individual entrepreneur (individual entrepreneurship), but it is important that its category allows you to engage in restaurant activities, which include the manufacture of bakery products. If you expand the category and the possibility retail, then you can safely think about starting from scratch and expanding it in the future by the type of network points of sale. Since UTII may not be available, you should immediately consider the possibility of working with the USN tax system, which can be used by all enterprises with an annual turnover of no more than 60 million rubles.

How to choose a room for a bakery?

It is desirable to focus your own bakery on the possibility retail sales. The fact is that the supply of catering establishments is not always profitable for small industries, as they have to compete with larger organizations. Therefore, it makes sense to think about how to start from scratch in a passable place accessible to the maximum number of people. Ideally, this could be a location near the metro, markets, as well as entertainment and shopping centers. But it should be borne in mind that the cost of renting such objects will be higher. If long-term work is planned, it is better to stipulate in advance the possibility of buying out the premises. However, you don't have to buy it right away. Equally important is the area of the premises for the bakery. On average, private institutions have 150-200 m 2. This is enough to organize and Production Department, and directly the area for a cafe or shop.

SES requirements for the premises

The main difficulty in organizing food production lies in the fact that they are subject to high requirements of supervisory authorities. To enter this business, it is not enough to know how to open a bakery from scratch by providing the premises with special equipment and furniture. You can start work only if the facility meets the requirements of the sanitary and epidemiological service:

 • The bakery cannot be located in the basement.
 • There must be a supply of hot and cold water.
 • A sewer drain is required.
 • A ventilation system is required.
 • The list of available utility rooms should include a toilet and storage.

In addition, the sanitary and epidemiological service subsequently checks the production process, drawing up conclusions based on their results. Only a complete set of permits will allow you to finally resolve all questions regarding how to open a bakery from scratch. Documents authorizing this activity include the following conclusions:

 • Test mixing plant.
 • Flour sifter.
 • Dough sheeter.
 • Bake.
 • Table for working with dough.
 • Rack cabinet.
 • Carts for baking.

At first, it is worth limiting yourself to this equipment, purchasing it one copy of each type. In the future, based on the work experience and sales success, it will be possible to purchase additional pieces of equipment for the production of bakery products in large volumes.

Equipment for trading purposes

This category of technical equipment is often considered as secondary. Usually it has such a value if the company is mainly focused on wholesale sales - for example, when supplying other stores and institutions Catering. However, most private entrepreneurs, in deciding how to open a bakery and confectionery from scratch, rely on retail sales. In such cases, it is necessary to provide commercial premises the following equipment:

 • Special showcases for bakery and confectionery products.
 • A cash register, which will also require registration with the tax office.
 • Safes for storing money and documents.
 • Trolleys and mobile boxes for moving products.
 • Racks for storage of released products.

bakery staff

All personnel involved in the maintenance of the bakery can be divided into several groups according to the type of their activity. It is worth starting with the main figure of any bakery production - this is a technologist. It determines what the products will be and partly the assortment of the enterprise. Next comes the working staff, which includes the bakers. Their number in a small institution can be 4-6 people. Again, if the question is how to open a bakery from scratch for retail, then waiters will be required. The role of the accountant is also very significant. Large organizations to ensure its function, they enter into an agreement with an outsourcing company, however, in small bakery It's cheaper to hire your own accountant. Also required are technical staff who will be engaged in setting up equipment, repairing it and, possibly, solving other related tasks.

How to form an assortment?

Despite the outward ease of this issue, the success of the business largely depends on it. Think over the assortment should be even before the start of the search for premises. Which products should be produced in a particular case will depend on the location, technical equipment and capabilities of the bakery as a whole. Of course, the wider the range, the better. But this is not always possible, and specializing in specific products often also brings a lot of income. A win-win option is a focus on the needs of potential customers. For example, if we are talking about how to open a mini-bakery from scratch in the village, then the assortment may include a basic set of products in the form of 2-3 types of bread, buns, cheesecakes, donuts, loaves and pies.

In the city, a similar list can be limited to metro areas and markets, where it is important for people to have a quick bite without any special culinary delights. However, if a bakery with a store is located near large shopping centers, parks or entertainment complexes, then the assortment should include cakes, biscuits, cakes, croissants, baguettes and always with a wide selection of fillings.

How to open a mini-bakery from scratch?

The peculiarity of the mini-bakery is that it uses a minimum set of equipment to produce products for retail sales. This is the optimal solution if financial opportunities are limited and the organization of production is planned in a small room.

In addition, the process of working with ready-made dough does not require a large area, which makes it possible to use small rooms. The main production operations will be baking products.

Raw materials for production

To begin with, it is important to note that the production of bakery products excludes the storage of initial products “in reserve”. Incidentally, the same applies to finished products, as it quickly deteriorates and loses commercial qualities. Initially deciding organizational matters regarding how to open a bakery from scratch, it is important to think over a clear supply chain with the further use of raw materials without delay. It is recommended to choose large factories. So, flour mills will provide the main ingredients for the dough. In addition to flour, you will need yeast, sugar, salt, butter and other ingredients. The choice of stabilizers, thickeners and various food additives should be approached carefully - their amount should be minimal. It is advisable to focus on organic products. In the long term, customers will appreciate the quality of products, and it will become good advantage ahead of competitors.

Conclusion

This is facilitated by the relatively low prices for the raw materials used, and the fact that the products of this category are always in demand among the population. However, so profitable terms activities quite naturally contributed to the formation of fierce competition.

Do you have a desire to open a mini-bakery, but do not know where to start? Then this article is for you!

Today on the Internet you can find a lot of recommendations step by step organization bakery business. However, the vast majority of them (in our opinion) absolutely do not correspond to the realities of modern life. Therefore, in this article, the reader will not see the usual, standard instructions and parting words.

We will show an effective, proven way to open a mini-bakery at home, which will bring real profit in a few months.

1. First steps

Almost all "professionals" are advised to start their business by registering and finding premises for a bakery. Forget about it. At best, your bakery will pay off for at least six months, at worst, you will go bankrupt.

Strange as it may sound, but you should start a baking business by looking for points of sale for finished products. If you manage to find and stake out a place with good traffic, you have already done half the work. Such outlets may be the following objects:

 • Passing place in the market. It is desirable that it be located near the exit.
 • Place (2x2 m) in grocery store. It is better that the grocery store is not large (pay less rent), but located in a passing place.
 • Point(s) at municipal institutions and in factories.

After you have agreed on a lease with the management of an enterprise or institution, you can start organizing bakery production.

2. Where to start?

"Make your business plan" - that's what is on the first lines today step by step instructions in recommendation articles on Internet sites. We advise another way: learn how to bake the entire range of intended products at home.

And do not rush to buy equipment. For these purposes, a conventional oven is sufficient. By learning to quickly and correctly perform all cooking procedures using household appliances, you can control the entire manufacturing process when you purchase professional equipment.

The range of bakery products that you need to be able to make should include at least three types of products:

 • Common products: rolls, loaves, bread.
 • Sweets: cakes, pies with a sweet filling.
 • Original products: pizza, pie and other products with meat (fish, mushroom) stuffing.

Later, in the process of selling the goods, decide how much to produce each of the products.

3. Production process

The organization of the production process of a mini-bakery consists of three phases: preparation of the premises, purchase and adjustment of equipment, search (or training) of personnel.

4. Room preparation

First of all, to open a bakery, you need a suitable room. The best way- this is private house or the first floor of a multi-storey building. To organize a mini-bakery at home, you need about 40 m2 of free space. If the kitchen area is not enough, then you will have to additionally equip the next room.

There are a number of requirements that must be observed when arranging production premises:

 • Waterproof floor. The walls are lined ceramic tiles or painted.
 • Hot and cold water supply.
 • Availability of ventilation and / or air conditioning systems.
 • Utility room for storage of raw materials.
 • Equipped fire extinguishing system (fire extinguisher).

At the same time, all hygiene and sanitation requirements must be observed. It is better to do this right away, because in the future (after registration) you will be visited by various inspection authorities.

5. Equipping with equipment

First initial stage you do not need the whole set of baking equipment. The most expensive appliance needed for the production of bakery products will be an oven. The best option is a two-section unit. Depending on the brand, model, its cost varies from 25 to 40 thousand rubles. A two-chamber oven is needed, since several types of products will need to be baked at the same time.

Other necessary equipment is: tables for cutting and forming dough, cabinets for storing ingredients (dough, fillers) and finished products. If you have several small rooms, then the oven and baking storage cabinet are installed in the kitchen, and the rest of the inventory in another room. With the correct distribution of funds, the total cost of baking equipment, furniture and tools will cost 50-60 thousand rubles.

6. Staff

It is impossible to organize and develop a bakery business alone, even at the initial stage. At the very least, you will need three assistants: a baker, a ready-to-cook food processor, and a salesperson. It is better to hire staff with experience in this field of activity. However, if there are none or the employee asks for an exorbitant salary, you can train your friends in the baking business at the initial stage.

7. Pricing policy

For successful trading, it is necessary to correctly set the prices for the goods sold. Thus, the cost of bakery products for general use (rolls, loaves) should not exceed that established in shops and supermarkets. To compensate for the low profit from sales, setting a higher price for other products (cakes, pizza, pies) will help.

8. Further development

Having established production and received the first profit, you can start registering your business. In Russia, you will receive a certificate in three days. However, in the future, you will have to go through other mandatory instances.

It is not recommended to expand production earlier than six months later. During this time, the entrepreneur must accumulate (with proper business management) 300-400 thousand rubles. This money will be required for the purchase of additional professional equipment (150-200 thousand rubles), rent and equipment of production facilities, and the arena of new retail outlets.

Main conditions further development mini-bakeries remain the same: search for points of sale - expansion of production (equipment, personnel), increase in the range - documenting all innovations.

How to open a mini bakery?

In this type of business, the main thing is to understand the specifics of making bread and take a responsible approach to your work. Still, we are talking about the manufacture of products for daily consumption.

Let's figure out what it takes to open a bakery:

1. Decide on the assortment of the future bakery. Here the choice is wide. You can produce ordinary bread that is popular with most people (sliced loaves, rye rolls, wheat bread, and so on), non-traditional varieties (for example, French rolls with various additives), confectionery and others. Create

It depends on your decision what equipment will be needed, how much money will be needed to rent the premises, what output volumes should be, and so on.

In your calculation, you must take into account:

 • production volumes. For example, mini-bakeries are capable of making up to 700 tons of products per day, ordinary bakeries - up to 3 thousand tons, and the largest ones - from 3 thousand tons or more;
 • room area - from 50 to 100 square meters;
 • product prices;
 • sales features and so on.

2. Analyze if opening a bakery is profitable in your area, how intense the competition is. If your city already has several private bread-making establishments, plus large bakeries, then you should think about starting a business in another locality.

3. To open a bakery cafe or any other business, will have to register. For a bakery, there are two main options - this is individual entrepreneur(simple, cheap and available) or LLC.

The first option is good at the initial stage, when there is no time to collect a large amount of papers and you want to start as soon as possible.

The LLC option is for serious business.

Resolve your tax issue.

To open a bakery, an excellent and most profitable option is UTII.

If it is not possible to issue it, then as an alternative, you can take the simplified tax system with 6 or 15%.

These types of taxation are available to all companies whose income does not exceed 60 million rubles.

As soon as you have registered, immediately apply for the transition to "simplified".

4. Before opening a bakery (bakery) you must take care of the choice of premises. Please note that not only the production of bakery products, but also their partial sale will take place in the selected building.

If the business is small (for example, a mini-bakery), then you can choose a place near business centers or the metro. The main requirement is high permeability.

For the first time, it is enough to arrange a lease, but with a further right to purchase. Otherwise, the constant relocation of the business will take a lot of time and bring considerable losses.

According to reviews, a bakery as a business should occupy at least 140-160 square meters. This place should be enough for the convenient location of all equipment and the organization of the technological process.

The average cost of renting such a room is from 70 thousand rubles. Additional costs must be added to the cost of repairs.

To study the numerous experience of other entrepreneurs who have created their own successful business with a franchise in the section of our website:

The most successful and informative case according to the editors of the Russtarup portal:

An interesting experience of creating a business under the franchising program is presented

When choosing and repairing a room, be guided by the requirements of the SES:

 • the bakery must have water (cold and hot), ventilation and sewerage;
 • it is forbidden to use the basement (semi-basement) premises;
 • it is obligatory to have a toilet, a warehouse, utility rooms, rooms where staff will be located;
 • the walls must be tiled (up to a height of 1.75 meters is mandatory), and the ceilings must be whitewashed;
 • the floor covering must be waterproof.

5. Equipment is one of the main items of expenditure. Of the basic equipment, you will need a baking trolley, a flour sifter, an oven, a dough sheeter, a proofer and a text mixer.

For the first time, one piece of each equipment is enough. Over time, production can be expanded.

In addition, you will need an oven, a heat showcase, a freezer, cash machine, a box for money, cabinets (ready-made bread will be stored in them) and so on. As a rule, the total costs are from 500 thousand rubles.

Additional item of expenditure - household goods, furniture and so on. But here the investments will be lower - from 30-40 thousand rubles.

6. Recruit qualified personnel. When opening a mini-bakery, you will need at least three to four people, including the main baker, his assistant, a technician, and a cleaner.

As for the functions of an accountant and manager, at first these responsibilities can be taken over.

With an increase in production, staff will have to be recruited. In this case, one shift should be at least 6-7 people. You will also need a driver and an accountant.

Please note that one of the main workers is a baker-technologist. It is on him that the quality of the prepared bread and the reputation of the institution depend. Try to find someone with experience and deep knowledge in this area.

7. After solving organizational issues, it is important to take care of obtaining all permissions:

 • conclusion from the SES. It can be issued in Rospotrebnadzor. As a rule, registration is free of charge, but the main requirement is the provision of the results of examinations;
 • conclusion from firefighters on the compliance of the building with all fire safety standards;
 • product conformity certificate;
 • hygiene certificate and quality certificate.

8. As soon as all the documents are ready and the workers are in the ranks, production can begin. At the same time, run ads to attract new customers.

Can arrange outdoor advertising, put a person to distribute flyers, place an ad in the local newspaper and so on. The more people who know about the new bakery, the better. Average cost per advertising company- from 40 thousand rubles.

 • purchase of equipment - from 500,000 rubles (one-time costs);
 • repair of the premises in accordance with the required standards - from 80,000 rubles (paid once);
 • payment utilities– from 100,000 rubles per month;
 • pay wages– from 300,000 rubles per month;
 • advertising - from 40,000 rubles.

Considering that your bakery manages to process about a ton of flour per day, and the price of one unit of production is about 40-50 rubles, then the business indicators will be as follows:

 • turnover - from 10 million rubles a year;
 • total income - from 2 million rubles;
 • net income - from 800,000 rubles.

The average payback of such a business is about a year.

 3. The decision of the fire inspection, on compliance with fire safety requirements.
 4. Permits for the supply of equipment, premises, personnel, etc.

Drawing up a business plan

Opening a bakery is a business that will require a lot of investment in the beginning.

Initial Costs will require significant capital investment. This means that before opening a bakery, it is necessary to calculate all the likely costs, risks, possible competitors -.

First, let's look at a sample business plan:

 1. First, we deposit 1,135,000 rubles.
 2. The monthly income will be 540 thousand rubles.
 3. Revenue 58400 rubles.
 4. It turns out that such a business can pay off only after two years.

If we imagine this in more detail: let's take, for example, an urban-type settlement with a population of about two hundred thousand people. Here you decided to open a bakery, with an assortment of about ten different types of pastries.

To get started, you need work out competitors. If in the village more emphasis is placed on baking bread, then we will deal with cookies and cakes. It is better to open a business as an individual entrepreneur, but you definitely need to conduct Accounting and it is better to hire an experienced accountant.

The business plan includes the mode of operation of the bakery. Since these will mainly be night shifts from 23.00–11.00, you need to draw up shift work. For example, work three in three, or two in two days. The employees involved in the implementation work from 6.00 to 17.00. With a five-day work week and one day off.

Choice of direction

Numerous bakeries, small private workshops, supermarkets, etc. are engaged in the manufacture of bread and other pastries. It will be difficult to compete with them, especially with small initial investments. But this is the case if you are thinking of opening a standard pastry shop or bakery.

And in order not only to stay on this market, but also to invent such a typification of the enterprise, which will turn into competitive advantage, you can, for example, cut the range of some products and bake no more than eight items. And all pastries should be unlike the one sold in most shops and stalls.

Room preparation

Choosing the right place for a mini-bakery is the components of your success in the future. There should not be other similar establishments near you - these are your competitors. If you are thinking of selling bread directly from the bakery, then the place must be a “walk-through”. And if you confine yourself to production, then it should be comfortable and practical in every respect.

For the location of an elementary set of equipment, an average of 80 square meters will be required. m. area, a lot depends on the range. Some products require special equipment, tables, which means that the area should be larger.

Of course, plumbing, toilet, ventilation, etc. will be needed. Separate warehouse space for storing raw materials and a separate baking room and packaging workshop.

Equipment preparation

Quality equipment and highly skilled workers, required condition for successful process. All equipment is divided into basic and additional. The main elements include: dough mixing machines, dough sheeters, proofers, ovens, refrigerators, flour sifters. Additional items include storage shelves, molds, packaging machines, sinks, scales, knives and more.

For a small mini-bakery you will need the following equipment:

 • oven 800,000 rubles;
 • dough mixer 280,000 rubles;
 • flour sifter 20,000 rubles;
 • confectionery table 4,000 rubles;
 • electric mixer 4,000 rubles;
 • dough proofing equipment 55,000 rubles;
 • dough rolling machine 40,000 rubles;
 • hood 20,000 rubles;
 • blender 3,000 rubles;
 • electric stove 25,000 rubles.

The approximate amount will be about a million rubles. You just need to immediately consider what kind of dough you will work with: yeast, biscuit, puff. This will depend on the direction of the equipment needed for the purchase.

Recruitment

Finding staff is not an easy task. After all, the work of a qualified baker is low-paid, but at the same time very difficult. On average, a baker receives up to nine thousand rubles, and a technologist even less, about six thousand per month.

To produce a thousand kilograms of baked goods per day, you will need:

 1. production technologist;
 2. two bakers;
 3. cleaning woman;
 4. packer (if necessary);
 5. loader;
 6. driver;

Promotion Methods

When you create a business plan, you need to immediately worry about the implementation. You can open your own store, or you can sell through other commercial outlets, and not necessarily only in the village, you can also outside it. There are some bakeries that quite successfully and successfully cooperate with wholesalers.

They buy pastries and deliver them to tents, stalls, shops. This option is not bad at all, because it will be possible to work without worrying about sales. And you can focus on increasing the range and quality of products.

You can trade "from the wheels", it is much cheaper than renting a store. In the regions, it is much easier to establish trade from a car than, for example, in the capital. Such a van can be rented for a start, and then redeemed. All you need is the permission of the local authorities.

Calculation of payback, profit and expenses

For a business to be profitable, you need to next job: make your own marketing study of the bakery market, learn the demand, price, volume and assortment of your main competitors. Calculate the main quantities of future production. This is done so that you can get the maximum income from the bakery.

The main factor that will affect your revenue is the cost of the main components. And the quality of the finished product will be affected by: the level of equipment, technological process, composition and properties of ingredients.

We calculate, according to the initial information.

Average price of raw materials for making bread and other products:

 1. Premium flour for 1 kg - 13.80 rubles.

Volumes for the year (GO) 360 days in two shifts, twelve hours each will be: GO = P x 12 x 2 x 360.

The performance of the oven is derived from the following calculation using forms for baking Borodinsky bread (0.9 kg) and a trolley.

GO = 96 x 12 x 2 x 360 = 829,440 kg of bread.

Flour of the second grade 50 kg. Price per kg 12.00 rub. The total cost is 600 rubles.
Rye flour 50 kg. Price 11.50 rubles. The cost is 575 rubles.
Yeast 1.5 kg. Price 29.50 rubles. The cost is 44.25 rubles.
Salt 5 kg. Price 4.50 rubles. The cost is 6.75 rubles.
Bottom line: weight about 150 kg worth 1230.00 rubles.

Equipment, product and money

Nikolai Svishchev and his friend Magomed Gabaev opened the Two Batons bakery in Belgorod.

The guys told how their business works.

Idea

Two years ago, Kolya became interested in home baking. He watched videos on the Internet, tried recipes and treated his friends to bread. Friends liked it, and Kolya decided to open a bakery to bake not ordinary bread, but with all sorts of additives and from whole grain flour.

At first there was no business plan, Nikolai simply voiced the idea to his friend Magomed. The guys started looking for a place and choosing equipment. Calculations on paper appeared only when the first costs started.

Equipment

The initial plan was as follows: in September, find two premises - for a baking shop and a store. Immediately order the equipment, but for now it will be transported from Moscow, quickly make repairs, then hire a baker. So it would be possible to start in a month - in October.

Equipment is the most expensive part of setting up a bakery. You need two mandatory units: an oven and a dough mixer. A professional oven bakes a lot of products at once, so you need a lot of dough, but you can’t do large volumes with your hands.

When buying an oven and mixer, you need to focus on future production volumes. If you save on the dough mixer, it will knead little dough and the oven will be idle. If, on the contrary, you buy a mixer that is too powerful, then the oven will not keep up with it. Nikolai and Magomed focused on a daily volume of 15 kg of finished products. This is not only bread, but also the so-called small thing: cinnamon and poppy seed buns, pies, rolls.

The stove was chosen for a long time and settled on domestic manufacturer. Bought in a Moscow company that sells catering equipment. The furnace cost 200 thousand rubles. They also bought a Chinese dough mixer for 30 liters for 40 thousand rubles.

In addition, we bought a flour sifter. According to the guys, if the production is small, then you can sift the flour by hand. I also needed a proofing cabinet: in it, the blanks for baking are settled and the dough has time to rise. 90 thousand rubles were paid for him and the flour sifter.

The bakery also needed a mixer to make confectionery: knead dough for cookies, whip cream, mix fruit fillings. Also bought a refrigerator; freezer to store butter and frozen fruit; metal shelving and several tables.

Now that the production process has improved, Dva Baton bought a second larger dough mixer in order to simultaneously knead the dough for bread and muffins. In addition, the bakery has another small refrigerator for fermenting dough. As needed, they buy all sorts of little things - dishes, baking sheets, rolling pins. As a result, about 550 thousand rubles were spent on all the equipment.

room

For the bakery, the guys needed 40 m² - this is the minimum area for placing a bakery according to sanitary standards, because it is necessary to place the baking shop, warehouse, staff room and outlet separately from each other.

You can’t just rent any room at 40 meters: Rospotrebnadzor has many requirements for such production. For example, it is forbidden to have a bakery on the first floor of a residential building or in the basement - these are the requirements of sanitary standards. Hot and cold water, sewerage and ventilation must be connected.

Equipment for a bakery - an oven, dough mixer, refrigerators - requires about 40 kilowatts of electricity. Most of this is consumed by the oven. For comparison, a private cottage needs a maximum of 15 kilowatts. Finding a room that meets all the conditions is not easy.

Bad start

At first, the guys wanted to save money and rented a room in the suburbs with an area of 50 m². It was assumed that there would be only production and a warehouse, and they would trade separately.

For the first three months of rent paid 60 thousand. In the city, they rented a place for a store for 15 thousand rubles a month and immediately paid a fee for four months. Ordered and paid for equipment. For a month, while the equipment was being transported, repairs were made in the workshop and store - about 40 thousand were spent.

The stove was brought first, but on the spot it turned out that it did not fit through the door. I had to disassemble the doorway, and then redo part of the repair.

Managed to meet the planned deadlines. By October, they even found a baker, agreed to postpone the launch for a week in order to work out the baking recipes. But when new employee came to work, it turned out that he had never worked on such equipment and, in general, he only knew how to make ordinary bread and would not learn anything.

Later, four more people came to get a job, each worked for a week and quit. There were no sales. The only good thing was that no new costs were foreseen: the rent was paid in advance.

In November, when it got colder, it turned out that it was impossible to stay indoors for the winter: the heating did not work, and the workshop was constantly flooded from above. We had to look for a new place.

We just moved in January.

New premises

As a result, Nikolai and Magomed rented 40 m² in a residential area of the city in the same building as Pyaterochka. Such a neighborhood then had a good effect on revenue: supermarket buyers turned into a bakery “by smell” along the way, even despite the absence of a sign.

The cost of rent under the terms of the contract, the owners of "Two Baton" do not disclose. But they assure that it is average in the city.

Saved on designers. On the planning and distribution of zones, we consulted with acquaintances who are engaged in the supply of equipment for public catering.

Builders were not hired for repairs. We did something with our own hands, friends helped us with something. They made partitions, painted the walls, laid tiles, installed plumbing, assembled a rack, a display case and a counter. The money was spent only on materials - it took 150 thousand rubles.

What documents were needed

The premises must comply with fire safety requirements, permits are needed. All these documents were with the owners of the building, where the guys eventually rented a room.

In Rospotrebnadzor, you need to get a conclusion that the production meets the standards, and pass the pastries for analysis and receive a certificate. Rospotrebnadzor also needs certificates from raw material suppliers.

It is necessary to notify the local department of the consumer market about the opening, to start personnel documentation.

The owners sometimes delved into all this themselves, somewhere they helped friends who already have their own business. Some of the questions were solved by the invited accountant. Now he works with "Two Loaves" remotely, keeps records and deals with the tax. His services cost 10 thousand rubles per quarter.

Personnel

Ever since the first unsuccessful launch, the guys have not had a permanent baker. Meanwhile, costs have been rising.

Desperate, Kolya and Magomed decided to bake bread themselves. None of them had ever worked on professional equipment, so they simply tried to repeat recipes for housewives from the Internet. It turned out to be a mistake: it's one thing to knead a pound of dough with your hands at home, another - ten kilograms in a dough mixer. The ingredients are mixed in a different way and the baking doesn't work. I had to recalculate the composition, change the recipe and experiment. Nothing worked.

By February, when almost six months had passed since the launch of the business, the partners were desperate and decided to close the bakery. At that moment, we finally managed to find a baker and "Two Loaves" started up.

In March, four people worked in the bakery: the chef, his assistant and the co-owners themselves. Nikolai and Magomed helped in production, worked with suppliers and stood behind the counter. The guys did not pay their own salaries, but invested all the profits in business development. The baker and his assistant worked part-time - 40 thousand rubles were spent on paying for their work, and the main part of this money fell on the baker - 25 thousand.

For six months, Kolya and Magomed helped in the workshop, learned to bake, and by October they realized that they were ready to do everything themselves, and refused the services of a baker.

Raw material

Two Loaves sells whole wheat bread, which is not as popular as conventional bakery products. Therefore, the guys immediately decided not to save on raw materials in order to attract quality and accustom customers to products. Wheat flour is bought from Belgorod producers, and whole-grain bio-flour - from farmers near Moscow.

Bio flour is made from wheat, which does not contain pesticides or chemical fertilizers during cultivation. Grain is ground on stone millstones. Such flour, as is commonly believed, gives the bread a special taste and is healthier. But it also costs more.

The bakery uses three to four sacks of regular wheat flour per month and two to three sacks of other types - rye, spelled, spelt. Although flour is bought from the same suppliers, each batch must be checked: raw materials may differ from time to time.

30 000 R

spend every month on the purchase of raw materials

Berries, fruits, vegetables, milk and cottage cheese for fillings are also bought from local farmers. Baked without chemical additives - improvers and powders: "Two loaves" want to occupy the niche of producers of environmentally friendly farm products. About 30 thousand rubles are spent monthly on the purchase of raw materials.

Costs and revenue

A loaf of ordinary bread in "Two Loaves" costs 30 rubles, the most expensive sourdough bread - 85 rubles. For comparison, the cheapest bread in Belgorod from a bakery costs 25 rubles. The bakery tries to keep prices low for buns and rolls, because it is located in a residential area and there are almost no offices nearby. The flow of people is small, and you have to compete with ordinary grocery stores.
