French fries in Belgium. Belgian fries. Modern recipe at home

It is not at all necessary to go to a McDonald's fast food restaurant to treat yourself and friends to such a dish as It is quite easy to cook on your own, at home. Even if you don’t have special appliances (for example, a deep fryer), an ordinary pan is also suitable for frying, and the result of labor, so to speak, can exceed all expectations and turn out even tastier than in a restaurant fast food. Deep-fried potatoes are good as a treat for children and as a beer snack for adults. You can also use it as a side dish for many meat and fish dishes of European cuisine.

The birthplace of french fries

Some countries - Belgium, France, Britain, the United States - have previously fought for the right to primacy. According to European tradition, the birthplace of french fries is Belgium. And not the United States at all, as one might assume. According to the Belgian National Museum, crispy appeared already in 1700! In those years, Belgian fishermen fried a small fish whole in a pan and ate it. But when the winters got harsh and the rivers froze, people couldn't go fishing. Then they cut out various figures of fish from potatoes, fried them in oil and ate them. The museum also houses a collection of antique fryers collected by one of the admirers of the dish, paintings depicting Belgian bistros, photos of pink potato tubers from Peru used for frying.

Legend

But what about "British" chips and "French" potatoes? The chefs representing these countries fundamentally disagree with the "Belgian" version of origin and dispute it in every possible way. However, the Belgians have a spare for this case, proving that the homeland of french fries is their country. During the First World War, American soldiers, while in French-speaking Wallonia (Belgium), tried this dish and mistakenly gave it the name "French".

old recipe

So, the birthplace of french fries is Belgium. Let's try, paying tribute to traditions, to cook this dish according to the classic old Belgian recipe (as they cooked in a bistro).

We will need: potatoes - one kilogram, beef fat - 200 grams, salt. As a deep fryer, if it is not at hand in the kitchen, you can use a large frying pan with a thick bottom and high sides or a saucepan.

French fries (photo on the right) are peeled and cut into "straws" (or you can, as in the old days, cut out fish figures from tubers). Next - melt in a deep fryer over medium heat so that it actually boils. Fry the pieces in fat until golden brown, constantly turning them over. Then we take out with a special spatula and set aside for ten to fifteen minutes. Then we produce a secondary frying of the product for several minutes. French fries (photo below) according to an old Belgian recipe are ready. characteristic feature of this dish is that the product is fried twice in beef fat. In addition, figurines of fish carved from tubers give a special piquancy to the dish. In the country where french fries were invented, you can still try a dish cooked in this way in the old fashioned way in the bistro.

deep fried

Modern French fries are, of course, not prepared with pure beef fat. For such frying, deep-frying is used (from the French word for "roasting"). The cooking method, by the way, is called similarly - deep-fried. It usually uses a mixture of vegetable and animal fats.

The cooking method itself is quite old. Even in China, similar dishes were known. The product being prepared is, as it were, cooked in a mixture that should completely cover it. The total mass of fat should exceed the mass of potatoes by about four times. Deep-fried potatoes should be cut into strips, no more than one centimeter thick (better - thinner). When frying, potato slices should move freely in the dishes (deep fryer or pan that replaces it).

Mix recipes

Here are some recipes for cooking mixtures for deep-fried potatoes:

  • 50 percent vegetable oil, 50 percent rendered beef fat;
  • 40 percent vegetable oil, 30 - pork, 30 - beef fat;
  • 50 percent vegetable oil, 50 percent cooking oil.

Butter is not suitable for mixtures (sometimes, however, ghee is used for donuts) and margarine.

Modern recipe at home

In a deep fryer or thick-bottomed pan, heat the deep-frying mixture (use the recipes above). It should almost boil. We clean the potatoes and cut into strips. Salt, let dry. Some cooks dry the pieces with a cotton towel. In any case, there should not be water on the potatoes, since when it comes into contact with deep fat, you will get “fireworks”! When the mixture boils, lower the straw into it so that the deep fat covers the product completely. Fry for three to five minutes until golden brown. We take it out of the pan with a slotted spoon. Let the oil drain from the potatoes. Serve hot, traditionally with ketchup.

ketchup recipe

You can make your own french fries sauce at home. In any case, it will be much tastier than store-bought.

We will need: a kilogram of tomatoes, two large spoons of sugar, salt, garlic, spices - to taste, fresh chopped greens, ground pepper, a little table vinegar (you can use lemon juice).

We cut the tomatoes finely. Place all ingredients in a blender and mix until a homogeneous mass is formed. Delicious ketchup for french fries is ready! Bon appetit everyone!

Before buying a franchise, I was a student and worked part-time. I have no experience in catering. Franchises were gaining popularity and I was considering a coffee shop. The only embarrassing thing was that there were too many outlets with coffee.
But we had a cool Frites kiosk with french fries in our city, and there were huge queues at the opening. Then I found out that there is coffee there too. Bingo! I liked the combination of unusual french fries and familiar dishes - coffee, hot dogs and other dishes.
I have been with the company for over 1.5 years. The launch was controlled by managers from Frites, they helped to find a place, staff, etc. By the way, they also helped to find good builders, otherwise I already had an unsuccessful experience.
Despite the fact that I have a kiosk format, in winter period drawdown in revenue maximum percent by 10-15%, because nearby parking for cars.
After a year of work, the company continues to be interested in my success and offers ways to earn more. Recently switched to new system accounting - quick resto. Comfortable. I consider my choice of the Frites franchise fully justified.
There are plans to develop and launch another outlet in Krasnoyarsk. I want a food truck format.

I am from Ulan-Ude. Prior to franchising, he was a salaried employee in the medical sales where he got what he wanted.
Further, a burning sensation in my chest and a desire for something more made me consider working for myself.
Why Franchise? Because the level of my competence in the field Catering would allow to open
at best, pie. Franchise provides a ready-made working tested model. Take it and do it.
Why Frites? I really liked the format of potatoes in bags. I myself am a big fan of potatoes, and what could be tastier
french fries? Choose from a variety of franchises. I was convinced by a trip to Krasnoyarsk, where I was convinced on the spot of the viability of the model,
in the seriousness of the guys, in the fact that I can make a profit.
I have been with the company for a year now. From the signing stage until now, always support and good advice.
Highly strong team. I have something to compare. I worked in federal companies and, I dare say, not everyone has such a level.
As I described above, I receive comprehensive assistance from the company. This applies to all aspects of activity.
Results? The fact that I, having no experience in business in general, with a head injury to a hired worker, was able to launch MY OWN in such a capacious area,
I'm not afraid successful business- says a lot.
The second point in the shopping center is very interesting. It's the format of the food court. Cinema, joyful kids and all with bags. Visualization is everything.

Hold on gentlemen!!!

I do not support previous reviews)) I will not justify, but I will tell you my experience. I have been an active franchisee of Frite’s for a little less than a year. Let's agree that the support of the company still exists and assistance is provided. Some recommendations may seem ostensibly obvious, but then why buy a franchise, since we ourselves know everything. When buying a franchise, the goal was to save time and get a package ready-made solutions and it met my expectations. When choosing a place, I counted the pedestrian traffic, I also took photos of the places and a video report, and I led the lease negotiations. But the leader Ivan helped me evaluate all this information and eventually make the right decision. As a result, I had to change my place due to the fault of the landlord. This is a common situation in any business, it happens and nothing like that. A little got out of the declared investment, so plus or minus 50tr should always be in stock. I have a kiosk format and I spent about 970 thousand. I received all the information about the franchise in 2 days. They gave me a manager, Elya, who helped launch. There were a hundred questions, but all the answers are in the documents. Issues such as gloves should be black or it doesn’t matter how to stick a sticker on a cup, what towels to buy, how to wash deep-fryers, etc. were resolved quickly enough, but it happened and waited a little longer. The only thing was that the issue of Coca-Cola was being resolved for a long time, because the equipment was already standing, but there was no cola itself. But! As a result, I get a cola at a very low price, which I myself would never have received for one point. There is a problem with staff turnover, but this is solvable and so everywhere. I love mystery shopping visits, because employees get objective assessment from the outside than I make comments. About how I introduced a couple of sauces without notice and received a verbal reprimand for this, I won’t tell everything, and so it’s clear. I won’t write about the numbers, since I’m still working, then everything suits me. I recommend a franchise for those who really understand that you have to work and no one will do anything for you.
P.S. I was asked to leave an objective review by Alexander from the escort department.
P.P.S Waiting for new items in the menu))))
Sincerely, Vadim.

I fully support the previous review. In fact, by buying this franchise you are buying a "talk package". The cost of opening is really far from the amount indicated by the franchise. Not taken into account weather work in window format. ALL ISSUES ARE RESOLVED EXTREMELY SLOWLY or not solved AT ALL. On the phone, support is more in the form of sympathy and oohs of sighs. There is also NO help in finding a point to open. Due to many problems, there is very little revenue that does not cover costs (rent, salary, products). The only thing that this franchise does well and on time is billing for "ROYALTY" and regularly calling with persuasion to make a contribution to the opening of another point, while stating that they do not Charity organization, although they are well aware of the real state of affairs. In general, if you do not want to lose your money - look for something else.

For many, fragrant sticks of fried potatoes in oil are their favorite treat. And Belgium is exactly the country where it is best to enjoy its indescribable taste.

Belgium is the birthplace of french fries

The Belgians are absolutely sure that french fries first appeared with them, and they are sincerely indignant when they are called French Fries - French potatoes. Residents even found an explanation for this fact: they say that the wrong name appeared due to the fault of American soldiers. While tasting French fries in Wallonia, Belgium during World War I, they heard French and mistakenly "attributed" the delicacy to the wrong cuisine.

In Belgium, there is also a legend about the appearance of a favorite national dish. It says that in the old days in the country they liked to fry fish in oil. But in winter it was impossible to go fishing on the frozen river. And then the savvy locals came up with the idea of putting potato cubes in boiling oil. The result was amazing, and the recipe quickly spread everywhere.

The Belgians themselves came up with their own name for french fries - "frit". It owes its appearance to the name of a local entrepreneur, Frite, who was the first to prepare and sell fried potato slices. It happened in 1861.

French fries are cooked in a special way in Belgium

Crispy crust, and under it crumbly pulp melting in your mouth - such perfection is prepared according to a special recipe. One of the secrets is that the peeled tubers are cut quite thickly. The strips should not be longer than 10 cm. For frying, not ordinary vegetable oil is taken, but fat - most often beef. Therefore, the taste of the dish resembles the unique grandmother's potatoes on cracklings.

But the main "trick" lies in the frying technology itself. The process is carried out in two approaches. First, the slices are dipped in less heated fat and are well fried inside. This is followed by an intermediate stage, when the extracted sticks are cooled. And finally, a hotter processing is performed, during which a crispy appetizing crust appears. Interestingly, from 1 kg of peeled potatoes, only about 500 grams of fries are obtained in the end.

In Belgium, potatoes cooked in a special way are traditionally served with mayonnaise or ketchup. However, any other delicious sauce is also welcome - there are about 30 of their recipes! The most daring gourmets can even try a combination of 5-10 different dressings.

The Belgians are so fond of frites that they even came up with a mitrailette sandwich with them. Half a baguette is filled with potato slices, fried meat, fresh vegetables and sauce. Today it is almost the most.

French fries are a national pride in Belgium

As you probably already understood, the Belgians love fries. It is not surprising that there are about 2,000 friteries and frit cots in the country - this is the name of the establishments where frites are cooked and served. Per capita, this number is even higher than that of McDonald's restaurants in the United States.

But the Belgians wouldn't be Belgians if they didn't come up with something else extraordinary. Every year on February 17, French fries Day is celebrated in the country, and in late autumn and early winter, the Fritkot festival is widely celebrated for a whole week! During such events, there are many competitions, for example, for the best packaging design for fries or voting for the most delicious potatoes. The atmosphere is indescribable!

In 2008, the Belgians officially "perpetuated" their passion for french fries - they opened a museum dedicated to him in, which is the only such institution in the world. Here you can get acquainted with the history of the origin and distribution of the dish, watch an interesting video about its preparation, see a collection of old deep fryers, paintings and other exhibits, and most importantly, taste the famous delicacy in a cafe (for a fee). The entrance ticket costs 7€ for adults and 5€ for children (from 6 to 11 years old).

Where to Eat French Fries in Brussels

Once in the capital of Belgium, delicious potatoes can be tasted literally everywhere. But the best friteries in Brussels are:

  • Maison Antoine at Place Jourdan. As many as three generations of the same family run their successful business here. French fries and mitrayet sandwiches are specialties of the Friteria.
  • Fritland on Rue Henri Maus. This establishment offers excellent Belgian potatoes. The dish is so in demand that the line for it almost never ends.
  • Friterie Tabora on Rue de Tabora. Here, too, the queue is not excluded, but it moves quite quickly. Portions in this place are very voluminous, food is allowed to take with you.

Over the past decades, the fast food market has reached a fundamentally new level - it has become more diverse, more popular and, of course, more profitable for entrepreneurs. However, such development could not but lead to fierce competition, which greatly complicates the process of entering the business. An alternative option for beginners and investors may be to purchase a franchise of one of the known networks, including the company that owns the trademark "Frite's".
